1996 | Association and Consortium

The “La Granda Quality Food” Consortium, born as an association of breeders in 1996, with the help and direction of Dr. Capaldo, believed in and gave life to a project to relaunch the Piedmontese cattle breed and to revalue the consumption of quality meat. Almost all the producers come from the Consortium for the Protection of the Piedmontese Bovine Breed and from the teachings of its founder, Dr. Francesco Delfino. The Consortium sought and collected the necessary stimuli to give shape to a new project, led personally by themselves.


Starting from an already high production standard, the Piedmontese cattle breeders have given life to a new production idea, attentive to the raw material, to the healthiness but also to the taste of the meat itself. All regulated by careful regulations, based on a different sensitivity towards issues related to animal welfare and, above all, on the desire to make a great leap in quality within the agro-zootechnical world in need of diversification.

Granda is much more than an excellent meat. Since 2004, it has been a real journey that enhances the quality of Fassona and gives all the protagonists of the supply chain the attention they deserve. It is a new way of producing meat, which starts from the land, because if the land is “good” the entire supply chain benefits. The founder of La Granda is Sergio Capaldo, who has always been the Zootechnical Manager for Slow Food and Meat Quality Manager of the Eataly group, of which the company has been a supplier since its foundation, sharing the same values and the same attention to the consumer.


The studies and research carried out by him in collaboration with some Italian universities demonstrate how agriculture is still not only one of the most important drivers of Made in Italy, but a sector in which technology, science, culture and innovation find ” fertile ground.” La Granda transforms the beef into large and small cuts, reducing scrap and waste to a minimum and guarantees a continuous profit for farmers, thanks to the establishment of the agreed fixed price. Breeders who belong to a Consortium founded in 1996 under the direction of Sergio Capaldo, which gave life to a project to relaunch the Piedmontese Cattle Breed, a Slow Food Presidium and to revalue the consumption of quality meat.


Breeders who follow careful regulations born from La Granda’s need to respect the balance between:

  • environmental well-being, based on guidelines that aim at soil fertility and at restoring and maintaining soil biodiversity (Symbiotic Agriculture);
  • animal welfare, based on farms in which calves are breastfed by their mothers for approximately 4-6 months, thus respecting the rhythms of nature (cow-calf line), as well as a careful selection of feed and fodder;
  • social well-being, based on the farmer as the central figure in the meat supply chain.

La Granda has brought man, animal, and nature back to the center of the food supply chain, restoring social and economic value to the role of the farmer/breeder, giving the animal the opportunity to grow in a natural and healthy way, and giving nature the possibility of self-regulation, self-protection above and below ground level. All for the benefit of the meat consumer.
